Simple & Quick Lasagna Roll Ups

Yum Yum! Italian dishes are by far some of the best.. and I am just now starting to learn how to perfect them. One of these lasagna roll-ups will have you feeling full. Perfect for a family night, especially for those pasta lovin’ kiddos!



Simple & Quick Lasagna Roll Ups

Ingredients

  • 12 lasagna noodles

  • 16 oz ground beef, 85% lean

  • 24 oz marinara sauce

  • 3 minced garlic cloves

  • 1/2 cup diced onion

  • 1 egg

  • 1/2 tsp black pepper

  • 1/2 dried oregano

  • 15 oz ricotta cheese

  • 1/4 cup shredded parmesan cheese

  • 3 cups shredded mozzarella cheese

  • 1/4 cup chopped parsley


Instructions

  1. Preheat oven to 375 degrees F.

  2. Cook noodles in a large pot of salted water, then drain and fill the pot with cold water to avoid the noodles from sticking.

  3. Next, cook the ground beef. Over medium-high heat cook beef until no longer pink, breaking up with spatula.

  4. Add onion to beef and cook until onion has softened.

  5. Add garlic, pepper and oregano to beef. Sautee for another minute.

  6. Add marinara to beef mixture, bring to simmer and turn off heat.

  7. Spread 1/2 cup of meat sauce over the bottom of casserole dish.

  8. In large bowl, stir together: ricotta, egg, 1/4 cup parmesan cheese, 1 1/2 cups mozzarella cheese.

  9. Place noodles over a large baking sheet in single layers. Place 1/4 cup of cheese mixture on top of each noodle. Add meat sauce to noodle and spread to end of noodle (pictured below.)

  10. Roll noodles up and arrange in casserole dish (pictured below.)

  11. Once all roll-ups are placed in the casserole dish, spread the remaining meat sauce over the top of the roll-ups and sprinkle the remaining 1 1/2 cups of mozzarella cheese.

  12. Cover dish with foil. Place toothpicks into the rolls to keep foil from touching cheese.

  13. Bake at 375 degrees F for 40 minutes. Remove foil and broil for another 2-3 minutes.

  14. Garnish with parsley and serve. Enjoy!
