>>> I had a request for some muffins from a coworker to help her celebrate her last week on the floor, her wish is my command! These muffins can be perfect for a brunch, family gathering, work pot luck or even just for yourself, hehe! <<<

Homemade Blueberry Muffins

  • Prep Time: 30 minutes

  • Cook Time: 30-35 minutes minutes

  • Servings: 12 muffins

  • Cuisine: American

  • Course: Breakfast/ Snack

Ingredients

  • Dry:

    - 3 cups all purpose flour

    - 3 tsp baking powder

    - 1/2 tsp salt

    - 1 & 1/2 cups sugar

    - 1/4 cinnamon

  • Wet:

    - 2 eggs

    - 3/4 buttermilk

    - 1/2 cup vegetable oil

    - 2 tsp vanilla extract

    - 2 cups frozen blueberries (can use fresh as well)

  • Glaze:

    - 2 cups powdered sugar

    - 2-4 tbsp milk, half and half or water (I used milk)

    - 1/2 tsp to 1 tsp vanilla extract

Instructions

  1. In a medium mixing bowl combine all dry ingredients; (flour, sugar, cinnamon, salt & baking powder.)

  2. In a large mixing bowl combine all wet ingredients; (eggs, buttermilk, canola oil/ vegetable oil & vanilla extract.)

  3. Once both bowls are completely mixed individually, begin to slowly add the dry ingredients to the wet ingredients. Continue to mix until well combined!

  4. Use a spatula to gentle fold the blueberries into the batter.

  5. Cover the bowl with a towel and let sit for 10-15 minutes.

  6. Preheat over to 425 degrees F.

  7. Line muffin pan with 12 liners. Fill the liners with the batter all the way to the top.

  8. Bake for 7 minutes at 425 degrees F, while muffins are still in the oven, turn the temperature down to 350 degrees F and continue to bake for 22-25 minutes.

  9. Insert toothpick in center of muffin to ensure it comes out clean with no batter on the toothpick. Let cool for 15 minutes.

  10. Mix glaze together in a small mixing bowl.

  11. Gently pour glaze over muffins until completely covered.

  12. Serve your homemade blueberry muffins!

    >>P.S. I add butter when serving, makes the muffins even better

Hope this recipe treats you well, enjoy the muffins!
