Banana Spice Cookies
A little bit of sweet and spice and everything nice <3
Bananas, Spice & Everything Nice Right?!
Yummm… not only do you get sweetness from the bananas but you get a little bit of spice as well! These cookies are actually some of my favorite… and I don’t say that often! Fluffy, moist, easy and not a crazy amount of ingredients… could it get any better?
Banana Spice Cookies
Prep Time: 5 minutes
Cook Time: 20 minutes
Cool Time: 10 minutes
Total Time: 35 minutes
Cuisine: American/ Pastry
Servings: 18 cookies
Ingredients
2 ripe bananas
16.5 ounce spice cake mix
2 eggs
2 tbsp flour
For the glaze;
2 cups powered sugar
1 tsp cinnamon
1 tsp vanilla
2 tbsp warm water
Instructions
Preheat over to 350 degrees F.
In large mixing bowl, stir together mashed bananas, cake mix, eggs and flour until smooth (dough will be soft, don’t be alarmed.)
Scoop dough with a cookie scoop or a tablespoon onto baking sheets lined with parchment (wax) paper. PS I sprayed nonstick cooking spray on wax paper to help prevent sticking.
Space cookies at least 1 1/2 inches apart.
Bake for 13 minutes or just until edges are brown.
Remove cookies from oven and let cookies cool until moving to wired cooling rack.
When cooled, before the glaze. (Glaze firms up quickly so make sure cookies are completely cooled before making.)
In a small mixing bowl, stir together powdered sugar, cinnamon, vanilla and water until glaze is spreadable.
Using a silicon brush, lightly brush over approximately 2 teaspoons of glaze on each cookie. (If you do not have a brush, you can use the back of a spoon to smooth over.)
Let cookies stand for 30-45 minutes until glaze is hardened.
When storing, place parchment (wax) paper between stacks to prevent sticking.
Eat within 3-4 days & of course, E N J O Y !!!
Strawberry Brownies
Who would’ve thought… strawberry brownies.. I know!!
I tend to take everything I bake to work and these seemed to be a favorite! in fact, they asked me to bring them back ASAP!
Now, I will say these brownies tend to be on the richer side.. so a small square will be just enough! Super easy & quick, will take you less than 30 minutes from start to finish!

Strawberry Brownies
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Servings: 12-24 brownies (depending on size)
Ingredients
1 box strawberry cake mix
2 large eggs
1/3 cup vegetable oil
1 tsp vanilla extract
For the Glaze:
3/4 cup powdered sugar
2 tbsp strawberry preserves
1 1/2 tbsp milk
Instructions
Preheat oven to 350 degrees.
Spray an 8 x 8 pan with nonstick baking spray.
In a large bowl, mix together strawberry cake mix, eggs, oil and vanilla extract.
Press mix into prepared pan (don’t be surprised of the thickness.)
Bake for 18-22 minutes, until just done.
Let cool completely before frosting.
In a small bowl, whisk powdered sugar, strawberry jam and milk.
Once brownies are cool, spread frosting over brownies.
Serve & enjoy!
Be My Valentine Cookies
Who doesn’t love a little pick me up?! With Valentines Day around the corner I had to throw in a little festive coloring in the batch.. of course my favorite color.. PINK! These fluffy cookies are the perfect way to spoil your loved ones, friends and most importantly yourself!
Valentine’s Crinkle Cookies
Prep Time: 20-30 minutes
Cook Time: 8-10 minutes
Servings: 24 cookies
Cuisine: American
Course: Dessert
Ingredients
1/2 cup vegetable oil
Red food coloring
1 cup powered sugar
2 eggs
1 box white cake mix
Instructions
Preheat over to 350 degrees F.
Link baking sheet with parchment or wax paper.
In bowl, use an electric mixer and combine cake mix, oil, eggs and red food coloring.
Place dough in fridge for 15-20 minutes and let chill.
Roll dough into 1 inch balls.
Cover 1 inch balls completely with powdered sugar and place on baking sheet.
Bake for 8-10 minutes.
Cool for 3-5 minutes before placing on cooling rack.
Serve & Enjoy!
P.S. It is okay if the cookies are a little bit golden that means they are fully cooked.

Homemade Blueberry Muffins
I loveee to bake, these homemade blueberry muffins are absolute perfection! Even though it may take longer to mix all together, it’ll all be worth it in the end.

Homemade Blueberry Muffins
Prep Time: 30 minutes
Cook Time: 30-35 minutes minutes
Servings: 12 muffins
Cuisine: American
Course: Breakfast/ Snack
Ingredients
Dry:
- 3 cups all purpose flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1 & 1/2 cups sugar
- 1/4 cinnamon
Wet:
- 2 eggs
- 3/4 buttermilk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 2 cups frozen blueberries (can use fresh as well)
Glaze:
- 2 cups powdered sugar
- 2-4 tbsp milk, half and half or water (I used milk)
- 1/2 tsp to 1 tsp vanilla extract
Instructions
In a medium mixing bowl combine all dry ingredients; (flour, sugar, cinnamon, salt & baking powder.)
In a large mixing bowl combine all wet ingredients; (eggs, buttermilk, canola oil/ vegetable oil & vanilla extract.)
Once both bowls are completely mixed individually, begin to slowly add the dry ingredients to the wet ingredients. Continue to mix until well combined!
Use a spatula to gentle fold the blueberries into the batter.
Cover the bowl with a towel and let sit for 10-15 minutes.
Preheat over to 425 degrees F.
Line muffin pan with 12 liners. Fill the liners with the batter all the way to the top.
Bake for 7 minutes at 425 degrees F, while muffins are still in the oven, turn the temperature down to 350 degrees F and continue to bake for 22-25 minutes.
Insert toothpick in center of muffin to ensure it comes out clean with no batter on the toothpick. Let cool for 15 minutes.
Mix glaze together in a small mixing bowl.
Gently pour glaze over muffins until completely covered.
Serve your homemade blueberry muffins!
>>P.S. I add butter when serving, makes the muffins even better

Peanut Butter Banana Overnight Oats
The quick 10 minute overnight oats recipe that will have you feeling healthy!
I have always been a fan of overnight oats when going out to breakfast, but never knew how simple it was to quickly whip together! Below is my recipe for peanut butter banana overnight oats, this is just one flavor that I have found to be my favorite. These oats have about 15g of protein and are the perfect morning snack. (:
Peanut Butter Banana Overnights Oats
Prep Time: 10 minutes
Cook Time: 4 hours
Total Time: 4 hours & 10 minutes
Servings: 2

Course: Breakfast/ Snack
Ingredients
1 large ripe banana, mashed
1 1/4 cups almond milk
1 cup vanilla yogurt ( I prefer siggi’s)
1 cup gluten free rolled oats
1/2 tsp cinnamon
1 tbsp chia seeds
2 tbsp peanut butter
Instructions
Add mashed banana, almond milk and siggi’s yogurt to a large bowl and stir together until creamy.
Stir in oats, cinnamon, chia seeds and peanut butter.
Cover and place in fridge for 4 hours or overnight.
Once ready to serve, divide between 2 mason jars (12 oz ), layering peanut butter and extra banana slices to you’re liking. I also enjoy adding additional fruits such as strawberries, or raspberries for some extra taste.

Simple & Easy Banana Bread
Hi friends! We all know how much I love to bake. Thought I would throw in my famous banana bread recipe that I’ve been making since 16 into your hands. This recipe is super quick and simple. It’s the perfect treat to take to your workplace, dinner party, or to a brunch. Hope you enjoy the taste as much as I do. (:
Simple & Easy Banana Bread
Prep Time: 20 mins
Cook Time: 40-50 mins
Total Time: 60-70 mins
Course: Sweet bread, pastry
Cuisine: American
Servings: 5-8
Ingredients: (per loaf)
8 Tablespoons butter
1 cup sugar
2 beaten eggs
3 mashed bananas
1/2 teaspoon salt
1 teaspoon baking soda
1 & 1/4 cups all-purpose flour
Instructions:
Preheat oven to 350 degrees.
Spray loaf pan with non stick cooking spray.
Cream together butter & sugar.
Beat eggs.
Mash bananas in a separate bowl.
Stir in mashed bananas & beaten eggs together.
Add egg & banana mix to the butter & sugar.
Mix up dry ingredients in a separate bowl (flour, salt and baking soda.)
Slowly, stir in dry ingredients to mixture.
Pour into a greased loaf pan.
Bake at 350 for 40-50 minutes.
Poke bread with toothpick to see if fully baked.
Cool for 10 minutes then slice into pieces and serve!
~ P.S. If you are a walnut fan, you can fold 1/3 cup of walnuts right before pouring into the pan for baking!
